The main feature of the recipe for soft lemon cookies is the  ease  with which you can serve homemade biscuits for breakfast  ,  excellent  and  quick to prepare . Fragrant, soft and tasty, and additionally tasty for several days. Perfect for coffee!


30 cookies

  • 280 g of wheat flour
  • 20 g of potato flour
  • 120 g of powdered sugar
  • 100 g of soft butter
  • 1 egg
  • zest and juice of 1 lemon
  • 1/2 sachet of baking powder (8 g)
  • pinch of salt

To make lemon cookies, beat sugar with softened butter until fluffy. Then add the egg and salt while mixing further.

Add the lemon zest, lemon juice, flour, potato flour and baking powder. Mix everything until you get a homogeneous mixture. Wrap in cling film and refrigerate for 1 hour.

After this time, take small portions of the dough and use your hands to form balls the size of a walnut. Have the sifted powdered sugar prepared on your plate. Cover the cookies with this sugar.

Place them at appropriate intervals on the parchment-lined trays. 

Preheat the oven to 180 ° C, bake for about 12-15 minutes or until they are lightly golden. Characteristic cracks will form on the surface at the end of baking.
