The new version of the Greek Salad is prepared from fried asparagus, cucumber, tomatoes, olives, feta cheese and seasoned with easy lemon dressing.

Asparagus is a fresh vegetable that can be prepared in spring and summer. I love stems and how well it suits almost everything, especially when combined with garlic. 

This dish is ideal for lovers of salads and vegetarians

Ingredients

  •  1 bunch of asparagus
  •  1 tablespoon of olive oil
  •  salt and ground black pepper
  •  1 glass of cocktail tomatoes – cut in half
  •  ½ medium red onion  – sliced
  •  1 cup yellow peppers  – chopped E in strips
  •  1 glass of cucumber  – sliced ​​and 1/4
  •  a portion of olives – how much you like
  •  2 tablespoons of feta cheese 
for dressing
  •  1 tablespoon of freshly squeezed lemon juice
  •  2 tablespoons of olive oil
  •  1 clove of garlic  – ground
  •  Salt and freshly ground black pepper to taste

Preheat the oil in the pan and cook asparagus for a few minutes until tender. Sprinkle with pepper and salt. Then let them cool down.

During this time, prepare the sauce. Mix freshly squeezed lemon juice with olive oil. Then add salt, pepper and garlic. Mix thoroughly.

In a large bowl, place all ingredients of the salad. Add asparagus and pour the sauce.

Sprinkle with feta cheese and enjoy the taste!
