FAST AND EASY
I needed something light and fresh, and at the same time a bit of summer’s taste on a cloudy day. The perfect addition to the grill, but also to something warm for dinner. Pico de gallo on steroids if we would add coriander / parsley, but I did not have one.
Ingredients
1 can of corn
4 pcs tomatoes Roman
1/2 onion onion
1/2 pcs lime
olive oil
basil
salt and pepper
Drain the corn.
Cut the tomato into cubes, as well as the onion.
Put the corn, tomatoes and onions in a bowl.
Season with lime, olive oil, basil and salt. Add pepper lightly.
Try and, if necessary, add extra lime juice.
