Tasty zucchini stuffed with rice and meat that is very filling. I love round zucchini, but you can also replace it with a long one. Perfect for lunch and dinner. It is also effective, so we can serve it to guests as it can be ready in the oven.
You can sharpen it a little by adding some chilli flakes.
A fresh salad is also perfect for serving.
Ingredients
- 3-4 small zucchini (round or flat)
- 200g mushrooms
- 500g of minced turkey
- 1 red pepper
- 1 onion
- 3 cloves of garlic
- 2 tablespoons of oil
- 200ml of tomato puree or ketchup
- 1 teaspoon of dried coriander
- 1 teaspoon of oregano
- 1 teaspoon of salt
- 1 teaspoon of sweet pepper
- 0.5 teaspoons of hot pepper

- 100g of rice (1 bag)
- 200g of cheese
Cut the mushrooms into a frying pan and fry them with 1 tablespoon of oil until they are soft.
Heat the oil in a frying pan.
Dice the onion into small cubes and fry in hot oil. We add chopped garlic.
Wash the paprika and dice it into small cubes, add to the onion. Fry until soft.
Add the turkey minced meat. Fry thoroughly until browned.
Add ketchup or tomato puree and spices: dried coriander, oregano, sweet and hot peppers, season with salt and pepper. Cook until the whole is aromatic and thick. Finally, add the fried mushrooms.
Cook the rice according to the information on the package.
Put the meat stuffing and rice into the bowl. We mix thoroughly.
Grate the cheese, although we can use slices.
Cut the courgettes in half and hollow the centers (seeds) to form a bowl. We put them on the baking tray.
Preheat the oven to 190 degrees Celsius.
Stuff the courgettes with stuffing. The amount of zucchini depends on their size. should be filled at least flush with the edge.
Put in the oven and bake for about 40 minutes.
Then sprinkle the top with cheese and bake for 10-15 minutes.
We serve warm.
