A simplified version of a delicious soup. Quick to prepare and perfect for hot days.
We used to rather not make cold soups, but nowadays, when it’s hot, we prefer to eat something cold rather than warm.
Ingredients
- 1 bunch chard
- 200 ml of water
- 1/2 bunch of dill
- 1 bunch of chives
- 1 bunch of radishes
- 3 cucumbers
- 400 g of natural yogurt
- 400g of kefir
- 500g of buttermilk
- 2 tablespoons of lemon juice
- salt and pepper
- sugar
Wash all vegetables thoroughly.
Chop the beetroot finely. Pour water and add a teaspoon of salt and sugar. Cook for 3-4 minutes from when it starts to boil. Then cool down.
Dill and chives finely chop. Grate radishes and cucumbers on a coarse grater. Sprinkle the cucumbers with salt (1/2 teaspoon) and set aside for 10 minutes. Then squeeze out excess water.
Place the kefir, buttermilk and plain yogurt in a large pot. Mix thoroughly. Add chard, greens, cucumbers and radishes. Mix.
Season with lemon juice, salt, pepper and sugar if necessary. Cool it down for 1 hour.
Serve with a hard-boiled or fried egg and dill.
