Delicious chocolate chip cookies made from chickpea flour that are crunchy on the outside, soft on the inside and filled with chocolate chunks. Cookies made from this flour can be a really healthy snack.
Ingredients
- 1/2 cup coconut oil or butter (melted and cooled down)
- 1/2 cup of brown sugar
- 1 egg
- 1 yolk
- 1 teaspoon of vanilla extract
- 1 1/2 cups chickpea flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 2/3 cup of chocolate pieces
- sea salt, coarse, for sprinkling (optional)
Preheat the oven to 180 degrees C. Also prepare a large baking tray with baking paper.
In a bowl, combine melted and cooled coconut oil (or butter), brown sugar, egg, yolk, and vanilla extract. Mix it up. It should be creamy and smooth.
In a separate bowl, combine the chickpea flour, baking soda, and salt. Add the dry ingredients spoon by spoonful to the wet ingredients until they combine well. Finally, add the chocolate pieces.
Use the spoon to scoop the dough and then make the balls; put them on a prepared baking sheet lined with baking paper. Gently flatten them, only the tops of the cookies.
Bake for 9-11 minutes or until the edges are golden brown. Allow the cookies to cool on the baking tray for 5 minutes before being pulled onto the wire rack to cool.
