Do you have too much zucchini like me? Try this recipe.
The recipe is simple and quick to make (about 20-25 minutes). Pancakes are suitable as lunch, dinner or lunchbox for work / school. Children will love them too.
Serve with your favorite sauce, e.g. garlic
- 2 grated courgettes
- 1 medium grated carrot
- 1 large egg
- 1 / 4 of cup (35g) breadcrumbs
- 1 / 4 of cup (30 g) Parmesan cheese (grated)
- 2 teaspoons lemon juice
- salt and pepper to taste
- 2 teaspoons of oil
Salt the grated zucchini, set aside for a while, then put on a clean towel or paper towel and squeeze out as much liquid as possible. Mix all ingredients with dough, except oil. Form about 8 pies.
Heat oil in a non-stick frying pan over medium heat and fry the pies for 4 minutes, turning halfway until golden brown. After turning, put small pieces of cheese to dissolve. Put on a paper towel to collect excess oil.
Serve with vegetables, almond butter or garlic sauce.
