Salad perfect for dinner or barbecue. Crunchy, nutritious and quick to make. It is also a perfect substitute for potatoes or rice and becomes an addition to fish or meat.
Spring is here and the barbecue season is about to begin. This salad will be perfect.
Ingredients
- 1 whole broccoli
- 200g bacon
- 1/2 pcs red onion
- 1/2 cup of sunflower seeds
- 1/2 cup of raisins
- 150g of yogurt
- 2 tablespoons of mayonnaise
- 1 teaspoon of honey
- 1 teaspoon lemon juice
- 2 tablespoons of apple cider vinegar
- 1/2 teaspoon of salt
In a pot, boil water with a teaspoon of salt and sugar. Cut the broccoli into florets. Boil in water for 5 minutes and set aside to cool.
In a small bowl, combine yogurt, mayonnaise, honey, lemon juice, apple cider vinegar, and salt. The ingredients should be thoroughly mixed.
Cut the bacon into small pieces and fry until golden brown.
In a large bowl, mix together the broccoli florets (cut into smaller pieces), bacon, diced red onion, sunflower seeds, raisins and prepared dressing.
Can be served immediately, but is best refrigerated for at least an hour.
