Kabak Salad – Turkish zucchini and yoghurt salad

Kabak salatsi is a creamy salad with yogurt and zucchini. It is perfect as an addition to food or as an addition to bread. It is perfect for grilled dishes and goes well with salmon.


4 servings

  • 2 small courgettes (or 1 larger)
  • 300ml of Greek (natural) yoghurt
  • finely chopped fresh dill
  • 1 clove of garlic
  • approx. 4-5 tbsp. roughly chopped walnuts (can be omitted)
  • olive oil for frying
  • Salt and pepper

Grate the zucchini on coarse meshes. Squeeze the zucchini water with your hands.

 Heat the oil in a frying pan and fry the zucchini for 4-5 minutes. Then let it cool down.

In a bowl, combine yogurt, finely chopped or crushed garlic clove, dill, salt and pepper. Then add the zucchini and walnuts . Mix and set aside for a while. 

Drizzle with olive oil and serve as an accompaniment to your meal or enjoy it with a piece of bread.
