Mexican Coleslaw

Mexican Coleslaw

Super fresh and delicious  with sprouts in a Mexican style. A great addition to many dishes.


Ingredients


6 servings

  • 1/4 head of small
  • 1/4 head of small white cabbage (only red can be used)
  • 2 grated carrots
  • 1 can of corn
  • 1/2 red onion
  • 1 small bunch of fresh cilantro or parsley
  • 1 small fresh chili

Sauce:

  • 1/2 cup of mayonnaise
  • Juice of 1 lime
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper

Mix all the ingredients for the sauce and refrigerate, then prepare the vegetables. 

Chop the cabbage, grate the carrots, cut the onion into thin slices, chop the coriander and chili. Transfer all the vegetables to a bowl and add the corn.

Pour over the sauce and mix well. Before serving, put the salad in the fridge.
