A high-protein way for a typical Polish summer dinner. Few ingredients and quick preparation, so what do you need? Everyone will like it, especially those on a diet.
Ingredients
2 servings (approx. 300 kcal each)
- 250 g of low-fat white cheese
- 1/2 cup of flour
- 1 egg
- Pinch of salt
- 12 strawberries or plums, but you can also use blueberries or raspberries
- potato flour to coat the dumplings
- erythritol / cinnamon / natural yogurt – optional for serving
Wash and dry the fruit. Use 1 strawberry or e.g. 3 blueberries for one dumpling
Place the cheese in a bowl and mash it with a fork. Add the egg, flour and a pinch of salt. Knead thoroughly until you create a uniform dough.
Divide the dough into 12 different portions. Form them into flat pancakes, place a fruit or fruits in the middle (in the case of blueberries, use several) and seal the edges to form a ball. Coat in potato flour.
Cook the dumplings immediately for about 5 minutes. You can also freeze them and cook them at a later time.
Serve with your favorite addition: erythritol, cinnamon or yogurt/skyr.
