A simple but impressive and satisfying fish dish!
Salmon fillets in panko and Parmesan. Easy enough for dinner during the week or for serving to guests! It does not require much work and the effect is amazing. Serve with the salad.
Ingredients
- 4 portions of salmon fillet (can be skinless)
- 3/4 cup panko breadcrumbs
- 3/4 cup finely grated Parmesan cheese
- 1 tablespoon of chopped fresh parsley
- 1/2 teaspoon garlic powder
- salt and black pepper to taste
- 1 tablespoon of olive oil
- 1 large egg
- 4 lemon slices
Preheat oven to 180 degrees C.
In a shallow dish (bowl) add: panko, parmesan, parsley, garlic powder, salt and pepper (about 1/2 teaspoon salt and 1/2 teaspoon pepper). Mix it well
In a separate dish, beat the egg.
Working with one piece of salmon at a time, dip each side into the egg, then transfer to panko mixture and coat. Press the batter against the fish.
Transfer to a prepared ovenproof dish, smeared with olive oil. Repeat the process with the remaining 3 portions (if you have breadcrumbs left, sprinkle it on the fillets and press gently).
Bake in a preheated oven until the salmon is barely baked, about 10 – 15 minutes (baking time depends on the thickness of the salmon).
Serve with lemon slices and lettuce.
