I know the healthy omega-3 fats in oily fish are important for the brain, nervous system and eyesight, so I figured I would use salmon leftovers from my freezer along with some cod.
I prepared a delicate mincemeat of these fish, and the potatoes and salad were a perfect addition. Of course, you can use these burger patties.
Ingredients
- 125g salmon fillet, skinned and chopped
- 125g cod, peeled and chopped
- 1/2 onion, chopped
- 50g grated Parmesan cheese
- 1 tablespoon of tomato ketchup
- 1 tablespoon of mayonnaise
- 30g breadcrumbs + optional for breading
- frying oil
- additionally: potatoes and salad or a bun for a burger
Finely chop the salmon and cod. Put in a bowl.
Add the rest of the ingredients: finely chopped onion, Parmesan cheese, ketchup, mayonnaise and breadcrumbs.
Then form the patties and you can coat them in breadcrumbs if you like.
Heat fat, e.g. oil, in a frying pan. Fry for 3-4 minutes on each side until golden brown.
Serve with potatoes and salad or as a hamburger with a roll and vegetables.
