Summer Salad with avocado sauce

The colors. This salad has what summer symbolizes, colors. Tasty, sweet – sour – spicy…. just perfect.

To be happy you need lettuce, tomatoes, corn, peppers, low-salt / pickled cucumbers and avocado… A tasty mixture.


  • 1 pc romaine lettuce
  • 2 pcs of tomatoes (red and yellow)
  • 1 pc red pepper
  • 1/2 pc of red onion
  • 2 small-salt (or pickled) cucumbers
  • 1/2 cup of canned corn


  • 1/2 avocado
  • 2 tablespoons of olive oil
  • 1 teaspoon of mustard
  • 2 teaspoons of lemon juice
  • 1 teaspoon of dried oregano
  • 1 clove of garlic
  • 1/4 cup of chopped parsley
  • a pinch of chilli flakes
  • salt and pepper

Thoroughly wash and dry all the ingredients of the salad (except for cucumbers).

Cut the romaine lettuce into thin strips. Dice the tomato into small cubes and the pepper into narrow strips. We put it in a bowl.

Dry the low-salt cucumbers and cut them into slices. We add to the salad.

Dice the onion into small cubes. We add to the bowl. Pour the drained corn into the whole.

We prepare the sauce.

Put avocado, lemon juice, olive oil, mustard, oregano, garlic and parsley in the blender. We mix. Season to taste with chilli flakes, salt and pepper as desired.

Add the sauce to the salad and mix thoroughly.
