Sweet potato fritters with sriracha mayo are an ideal option for an appetizer or lunch. The recipe is simple, vegetarian and quite interesting in taste.
The sweetness of pies, seasoned with cinnamon, has an interesting taste with the sharp taste of mayonnaise mixed with sriracha.
Ingredients
- 2 large sweet potatoes, coarsely grated and dried with a paper towel
- 2 eggs
- 1/2 cup flour
- 1/2 cup breadcrumbs
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- frying oil
- 3 tablespoons of mayonnaise
- 1 tablespoon sriracha sauce (or less)
In a large bowl, combine sweet potatoes, eggs, flour, breadcrumbs, cinnamon and salt. Mix well
Leave the mixture for about 10 minutes.
In the meantime, prepare Sriracha Mayo. Combine mayonnaise and hot sauce, stirring thoroughly. Put aside.
Heat the oil over medium heat in a medium frying pan.
Take enough potato mix to make it fit in your hand. Make a ball, then flatten and form a small, flat fritters.
Put the fritters in the pan. Fry for about 5 minutes, until it is baked and turns golden, turn it around.
Remove to a paper-lined plate.
If necessary, Yo can add more oil to the pan.
When all the dough is baked, place the pies on a serving plate and serve with Sriracha Mayo.
