A simple recipe for a quick herring in oil, with dried tomatoes, peppers, French mustard and onions. Tasty and easy to prepare.

Ingredients
- 500g of herring matijas
- 1 white onion
- 150g of dried tomatoes
- 100g pickled pepper (optional)
- 2 tablespoons of French mustard
- 2 tablespoons of balsamic vinegar
- freshly ground pepper
- olive oil
- chilli pepper (1 small or half a teaspoon of dried flakes)
Drain the herring and cut into strips. Put in a bowl.
Cut the onion into crescents, dried tomatoes and marinated peppers into thin strips. Add to the bowl.
Add French mustard, balsamic vinegar, chili and freshly ground pepper to the bowl. Pour the whole with olive oil. Mix.
Set aside in the refrigerator for about 2 hours. Can be refrigerated for several days.
