Grilled corn is the standard street food in Mexico and it’s really easy to prepare!
I present Mexican-style corn in a slightly Polish version, because I didn’t have the opportunity to find a Mexican cheese , cotija, so I replaced it with grated Parmesan cheese.
The ingredients do not contain exact amounts.
- 4 corn cobs
- 50g cotija or parmesan cheese, grated
- 1 teaspoon of dried chilli
- 1 teaspoon of dried coriander
- 2 tablespoons of lime juice
Grill the corn on each side. The grains should be soft and the top lightly browned.
Using a brush, brush corn with the lime juice. Sprinkle with a mixture of chilli and coriander and cheese.
Serve immediately, e.g. with a lime slice
