Very good, juicy tenderloin that won our hearts. It is inspired by a recipe I saw somewhere. You can prepare it just in time for lunch or a special dinner.
Ingredients
- 1 pork tenderloin (can be divided in half)
- 150g raw bacon, sliced
- 1 tablespoon of clarified butter (or oil)
- salt and pepper
- approx. 150 ml of broth
Marinate:
- 1/2 teaspoon of sweet pepper and 1/2 teaspoon of hot pepper
- 1/2 teaspoon of ginger
- 1/2 teaspoon of ground, dried mushrooms
- 1 tablespoon of oil
- pinch of salt
Additionally:
- 2 tablespoons of plum jam
- 1 tablespoon of French mustard
To serve: mashed potatoes and your favorite salad or beetroot
In a bowl, mix hot and sweet peppers, ginger, ground dried mushrooms, a pinch of salt and oil. In a separate bowl, mix jam and mustard.
Spread the first marinade with peppers over the tenderloin (or divided into 2 tenderloins 😉). Set aside for 15-20 minutes. Then season with salt and pepper. Wrap the tenderloin in bacon slices and fry until brown on all sides.
Meanwhile, preheat the oven to 180-190 degrees Celsius.
Place the tenderloin in an ovenproof dish and spread with the jam and mustard marinade. Add approximately 150 ml of broth.
Put the dish in the oven and bake for about 15-20 minutes.
Remove the tenderloins from the oven and set aside to rest for 5 minutes. Cut into slices and serve with mashed potatoes and your favorite salad.
