5-ingredient Zucchini Fritters

You only need these five ingredients and a dozen or so minutes to prepare simple zucchini fritters. Perfect for dinner or as a snack!


  • 4 cups of zucchini
  • 2/3 cups of flour
  • 2 eggs
  • 1/3 cup finely chopped onion
  • 2 tablespoons of oil
  • salt and pepper

Grate the zucchini, sprinkle with salt and set aside for 10 minutes. Put it on a strainer and squeeze as much liquid as possible from the zucchini with your hands. Put the zucchini into a bowl.

Add flour, eggs, finely chopped onion, a pinch of salt and half a teaspoon of pepper to a bowl, stirring until combined. 

Pour the olive oil into the frying pan over medium heat. When it warms up, put the courgette dough on the pan to form pancakes. 

Fry the zucchini patties for 3 minutes, then turn them over and fry an additional 2 minutes until golden brown.

Put the zucchini pancakes on a plate lined with a paper towel. Do this with the next batch of dough.

Serve with salad and garlic or feta sauce !
