Shakshuka with asparagus

Shakshuka! Have you ever eaten it? Shakshuka is something extraordinary. The word shakshuka comes from Arabic, which means “accidental mix” or “all mixed up”.

Shakshuka contains poached eggs in a hearty tomato sauce with toppings.

My shakshuka is simple, it contains asparagus and zucchini. Just the perfect breakfast for an active day!

Ingredients

  • 2 pcs tomatoes
  • 1/3 of zucchini
  • 4 pcs green asparagus
  • 2 tablespoons of ketchup
  • 1 tablespoon of olive oil
  • salt pepper
  • 0.5 teaspoons of sweet pepper
  • 2 eggs
  • parsley (coriander)

Preheat the oil in the pan. Cut the small pieces of asparagus and drop into the pan. We are frying for a moment.

Cut the zucchini into cubes and add to the asparagus. Fry.

Cut the tomatoes into cubes, add them to the pan and mix. When the tomatoes are tender, we can add ketchup and spices.

Stir for a moment, then make two holes in the egg pan. We put eggs into each one.

Cover the whole with a lid and stew until the eggs are cut in a favorite way.

Ready! Can be served straight from the pan or put on a plate. Sprinkle with parsley or coriander.
